Eric’s 60 Second Kitchen - Russian Strawberry Soup
RAPID CITY, S.D. (KEVN) - Strawberries are lookin’ good in the grocery stores these days!
Here’s a decadent treat for you - a unique way to use them - the recipe is called Russian Strawberry Soup.
First, chop a half cup to a cup of fresh strawberries. Place in a bowl and sprinkle with 1 tablespoon of sugar. Let sit for 15 to 30 minutes.
In a blender, combine the chopped strawberries with another tablespoon of sugar, 1/2 cup sour cream and 1 cup heavy cream. Pour in 2 to 4 tablespoons of Pinot Noir.
Blend until smooth. Refrigerate until very cold, Serve with a sliced strawberry and a spring of mint on top.
