Eric’s 60 Second Kitchen - Corny Bean Salsa
RAPID CITY, S.D. (KEVN) - Here’s a different kind of salsa for you ... no tomatoes in sight!
A Corny Bean Salsa, here’s what you do: in a large bowl, combine a can of corn and a can of black beans, drained. Add to that 4 thinly sliced green onions (white and green parts), 1/2 c chopped red bell pepper or mixed peppers, and 1/4 c finely chopped fresh cilantro.
In a small bowl, whisk together 2 tablespoons of lime juice with a teaspoon of cumin and a half teaspoon of Cajun seasoning. Pour over the corn and bean mixture and toss to combine. Refrigerate at least 1 hour before serving.
Serve with scoop chips.
